Salt 0.5 tsp
Sugar 1 tbsp
Wheat flour 160 g
Milk 250 ml
Eggs 2 pc
Zucchini 300 g
Parsley to taste
Vegetable oil (+ some for frying) 2 tbsp

How to fry zucchini pancakes in a frying pan? Prepare the necessary ingredients for this. Choose young zucchini. This type of zucchini has a soft skin and no seeds at all inside. Therefore, it is enough to simply wash it and you can start cooking. If you take a large zucchini, then it must be peeled and cored.

Cut off the tails of the zucchini on both sides and grate it on a coarse grater. Squeeze the pulp from the juice that appears.

Add the eggs to the bowl and mix them with the zucchini.

Then beat the whole mass with an immersion blender to make it more homogeneous.

Pour vegetable oil and milk into the bowl. Add sugar and salt. Gradually add the sifted flour and knead the pancake dough. Use the amount of flour based on the consistency of the dough. It shouldnʼt be thick. The thicker the dough, the thicker the pancakes will be. To make the dough homogeneous, you can use a mixer. It will break up all the lumps of flour.

It is convenient to use a pancake pan for frying. Before the first pancake, grease the pan with vegetable oil. Pour some pancake batter into a hot frying pan and spread it evenly over the entire surface. Cook the pancake over low heat for a minute on each side.
