Basic:

Sugar 0.5 cup
Wheat flour 2.5 cup
Sunflower oil 2.5 tbsp
Soda 0.5 tsp
Brine 0.5 cup

How to make pickle cookies? Prepare the required ingredients. It doesn’t matter what kind of brine you use: from purchased cucumbers or from those that you spun yourself for the winter. The taste of the cookies will be almost the same (unless the brine has a strong garlic smell).

In a separate bowl, mix cucumber pickle, sugar and sunflower oil.

Add flour mixed with soda and knead into a soft, non-sticky dough. It may take a little more or a little less flour. Let the dough rest for a while under the film. You can use baking powder instead of baking soda.

Roll out the dough on the work surface of the table into a layer 0.6-0.7 mm thick and cut out shaped cookies from it. If you donʼt have special molds, you can use a regular glass and make round cookies.

Bake in an oven preheated to 180-170 degrees for 15-20 minutes until the cookies turn pink. If you like it drier, hold it longer. The temperature and baking time depend only on your oven, use it as a guide. When the cookies are browned, remove them and cool.

You can sprinkle the finished cookies with powdered sugar. Its taste is no different from regular cookies (except that it turns out tastier). The brine, as I understand it, is used here for friability, and it does its job! Bon appetit!
