Classic Bolognese Meat Sauce for Pasta

Ingredients (5 portions)

Basic:

Garlic 1 clove
Tomatoes (tomatoes in their own juice) 400 g
Olive oil 3 tbsp
Butter 30 g
Water 1 cup
Tomato paste 2 tbsp
Carrot 200 g
Bulb onions 1 pc
Minced meat 500 g
White wine (can be replaced with water) 150 ml
Celery stalk 1 pc
Heavy cream 1 tbsp

Recipe instructions

In a frying pan add 1 tbsp. spoon of olive oil, add minced meat (I used 50:50 pork and beef), separate the minced meat into small pieces with a fork. Simmer for a few minutes. Transfer meat to a plate or bowl.

Cut the onion, carrots and celery into small cubes. Add 2 tablespoons of 30g olive oil to the frying pan. butter, add vegetables and fry for 6-7 minutes.

Combine meat and vegetables, pour in the wine, stir. Simmer until half the liquid has evaporated, about 5-6 minutes.

Add tomato paste, tomatoes, 1 tbsp. sour cream or heavy cream, water. Simmer the sauce over low heat for 40-50 minutes until it thickens. Stir occasionally. If you see that the liquid has all evaporated, add a little boiled water.

2-3 minutes before readiness, add salt and pepper to taste.
