Garlic and Onion Stewed Tomatoes

Spicy, aromatic, bright and amazingly delicious! Cooking stewed tomatoes in a frying pan with garlic and onions is incredibly easy, quick and simple. They can be served for breakfast with a fresh baguette or offered for lunch as an addition to the main course.

Ingredients (4 portions)

Basic:

Onion (small) 2 pc
Garlic (small) 3 clove
Tomatoes 800 g
Olive oil 2 tbsp
Salt to taste
Butter 1 tbsp
Tomato paste (optional) 0.5 tbsp
Greenery to taste
Oregano dry to taste
Allspice to taste

How to stew tomatoes with onions and garlic in a frying pan? First of all, prepare all the necessary products. Choose tomatoes that are firm, elastic and juicy. You can use regular onions or take red salad onions. I used both types, so the finished dish became more colorful and appetizing.

Peel the onion and garlic. Rinse tomatoes, herbs, onions and garlic under running cold water.

Cut the onion in half, and then cut each half into two or slightly more pieces to make large slices.

Cut the garlic into thin slices, as in the photo.

Cut each tomato into two parts. Remove the stem attachment points and chop the tomatoes into slices.

Melt the butter in a frying pan and fry the onion in it until softened. Next, remove the onion using a tablespoon.

Add olive oil to the pan (you can use regular refined vegetable oil). Add garlic and tomatoes to fry for 3-5 minutes.

Add the chopped herbs to the tomatoes and add salt to taste. At this stage, you can add your favorite spices and seasonings. You can also use a little tomato paste for a more intense and rich taste (less than a tablespoon will be enough). Mix everything carefully and simmer over low heat with the lid closed for about 5 minutes.

Next, add the previously fried onions to the pan. Carefully, so as not to turn the tomatoes into porridge, mix everything and leave on low heat for another 2-3 minutes. Remove the dish from the stove and let it sit for a while.

Stewed tomatoes are very tasty when served hot.

They will serve as an excellent addition to pasta, crushed potatoes or boiled buckwheat.

They are no worse when chilled. Pairs perfectly with a crust of fresh bread or a slice of toasted loaf.
