How to make shortbread cookies with jam? Prepare your food. Take high-quality butter, made according to GOST, with a fat content of 82%. The eggs are large, category zero. Vinegar 6% — you will need it to extinguish the soda. For shortbread dough, it is important that all ingredients are at the same temperature. Therefore, remove them from the refrigerator in advance.

Grind soft butter at room temperature with sugar. For this procedure, I used a regular fork.

Beat in the egg and mix the mixture again until smooth.

Quench the soda with vinegar and add to the dough.

Add salt and sift the flour. For baking, the sifting procedure is very important — the finished products are very fluffy and tender. Therefore, do not neglect this process.

Knead the dough. It turns out soft and smooth. Divide the dough into 2 equal parts, wrap one part in film and put it in the freezer.

Grease a heat-resistant dish, preferably a square shape, with butter. You can use a regular baking sheet.

Spread one piece of dough (not from the freezer) over the bottom. About 5-7 mm thick. This is easy to do by hand.

Next, add a layer of jam. It can be any jam, not very liquid and without seeds. Store-bought jam is also great. I took homemade apple jam and store-bought kiwi jam. Spread jam or marmalade throughout the dough.

Grate the remaining dough from the freezer on a coarse grater in a thick layer so that all the jam is covered with dough. Bake in an oven preheated to 180 degrees for 20-30 minutes until browned. Cut the finished cookies hot right in the mold into squares of the desired size, cool and serve.
