If you add more tomatoes, the finished scrambled eggs will be juicier. You can use any sausage. I really like the taste of fried boiled sausage, so thatʼs what Iʼll use. If desired, it can be replaced with smoked one.

Heat a frying pan until hot. Pour a little vegetable oil and add the prepared sausage. Fry it for a couple of minutes on both sides until golden brown.

Immediately arrange the chopped tomatoes. If you pre-fry them, they will lose their shape. This way they will warm up evenly along with the eggs. During cooking they will become softer, but will not have time to spread over the pan. Salt the scrambled eggs a little and sprinkle with spices. I use paprika and ground pepper as spices.
