Pumpkin Pilaf Delight

Bright and fantastically appetizing — what could be better? Rice with pumpkin is similar to vegetarian pilaf, but only pumpkin is used as a vegetable. This rice can be served as a side dish or as an independent dish. It will help you out during fasting, as it does not contain animal products.

Ingredients (4 portions)

Basic:

Garlic 2 clove
Salt to taste
Rice 1 cup
Vegetable oil 4 tbsp
Dry spices to taste
Turmeric 0.5 tsp
Pumpkin (cleaned weight) 250 g

How to make rice with pumpkin in a frying pan? Prepare your food. Any rice will do — round or long, I used steamed rice. Just keep in mind that depending on the variety, its cooking time will differ. Read about it on the rice packaging. The article at the link at the end of the recipe will help you with choosing rice. The weight of the pumpkin is indicated already in peeled form. Take refined oil. You can use any spices to your taste.

Finely chop the peeled garlic cloves. Adjust the amount of garlic to your taste.

Cut the pumpkin and remove the seeds. Cut off the skin. Cut the pulp into medium-sized cubes. I took a sweet butternut squash, if you don’t like the combination of sweet and salty, then take a regular one.

Heat vegetable oil in a frying pan or cauldron with a thick bottom over medium heat. Place garlic in oil. Fry it, stirring, for a couple of minutes. It is important not to overheat the oil, otherwise the garlic in it will burn. Add pumpkin pieces to the pan. Fry it, stirring, for about 5 minutes. Salt and pepper the pumpkin to taste. Add turmeric — it will give the dish a beautiful yellow color.

To make the dish look like pilaf, you can add barberry and cumin to it. I threw in a few dry barberries. Stir in the pumpkin. Add washed rice to it. Stir again. Pour enough hot water into the pan to cover the top of the rice by a finger. Salt the rice. But donʼt stir. Cover the pan with a lid and reduce heat to low. Cook rice for 15-25 minutes, depending on the variety.

The water should be completely absorbed into the rice. If it still remains hard, then pour in a little more boiling water. Stir the finished dish.
