How to make soba with vegetables? Prepare ingredients for making noodles. Take young zucchini, it is soft and tasty. Or you can use zucchini. No salt is needed; soy sauce is used instead. Instead of ground spices, you can use fresh ginger and garlic. For vegetables, you can also add eggplant and green beans. Wash the carrots well, then peel them. It is important that the vegetables are dry, as they will fry and the excess moisture will cause the oil to sizzle and splatter. Cut the carrots into narrow strips. When preparing Japanese noodles, this cutting is considered traditional.

Wash the zucchini and dry. If the skin is too thick, remove it with a vegetable peeler. Cut the zucchini in the same way as the carrots.

Wash the peppers and dry them. Cut the pepper into the same strips as the other vegetables.

Place a large skillet for vegetables and a pot for noodles on the stove. Vegetables and noodles cook in about the same time, so we will do everything at the same time. Let the pan heat up. Pour oil on it and then add vegetables. Make the heat strong; vegetables should be fried, not stewed. Add sugar; the vegetables will lightly caramelize and become beautifully shiny. Donʼt worry, they wonʼt become sweet, just a slight aftertaste.

Let the vegetables fry for 7-10 minutes, do not forget to stir them. There is no need to fry them longer; the vegetables should remain slightly crispy. In the meantime, the water will boil, add a little salt and add the noodles. Cook the noodles according to package directions, usually 7 minutes. But do not overcook it; the soba should remain slightly firm, al dente. This will make the noodles tastier and not stick together. Add the finished noodles directly to the frying pan with the vegetables, bypassing the colander. It’s okay if a little water gets in there, it will only make the noodles juicier. Add spices to the noodles and pour in soy sauce. Stir.

Cover the pan with a lid, reduce the heat and let the noodles “make friends” with the vegetables and soak in the aromas of the spices. Let it simmer in this way for about 5 minutes. Then arrange the noodles on plates, sprinkle sesame seeds on top and serve. Bon appetit!
