How to make crackers at home? Prepare the necessary ingredients. Take water at normal room temperature. Vegetable oil without odor is better. For crackers, the gluten content in flour should be within 28-30%, which is typical for premium and first grade flour. To ensure successful crackers, you should not use a lower grade of flour.

Combine flour with salt, sugar, baking powder, mix. Sift the dry ingredients into a convenient container. It should be of a suitable size and height so that the flour does not spill out onto the table when sifting. Sifting will enrich the flour with oxygen and thereby improve the structure of the finished crackers.

Add flax seed to the sifted dry ingredients and mix. Flax can be replaced with sesame or sunflower seeds.

Make a well in the flour and pour in the vegetable oil.

Add water. Stir the dough first with a spoon, then knead with your hands. This must be done quickly, no more than 3-4 minutes, so that the cookies do not turn out dense and harsh. If the dough turns out watery, then add a little more flour, if, on the contrary, it’s lumpy, then add a little water.

The dough turns out tough, but soft. Wrap the dough in cling film or cover it to prevent it from airing. Leave the dough to rest for 30 minutes. During this time, the gluten in the flour will swell and the dough will become more pliable. It will be more convenient and easier to roll out. Turn on the oven to 190 degrees in advance.

Sprinkle the table with flour, place the dough on it and roll it out into a layer about 2 mm thick.

Cut the dough into cookies of the desired shape and size.

Carefully transfer the blanks to a sheet covered with oiled parchment. Prick each cookie with a fork to prevent it from puffing up while baking.
