Oven-Baked Pink Salmon with Tomatoes and Onions

This is a wonderful dinner, breakfast and main course for lunch, a great snack, as well as a luxurious holiday dish. You can take this beauty to a picnic to cook on the grill or directly on the coals. We serve fish with vegetables both as an independent dish and with any side dish. Pink salmon prepared according to this recipe is good even when chilled (as an appetizer).

Ingredients (2 portions)

Basic:

Onion 70 g
Tomatoes 100 g
Salt to taste
Ground black pepper to taste
Lemon juice 10 ml
Butter 20 g
Vegetable oil 1 tsp
Dry spices to taste
bell pepper 70 g
Parmesan 35 g
Pink salmon 300 g

If you have a whole fish, defrost it, gut it, separate the head, tail, spine, fins and remove scales.

We wash the carcass and divide it into pieces.

While the oven is heating up (up to 190 degrees) and while we are preparing the vegetables, let the pieces marinate in spices and lemon juice (sprinkle lightly, you can add thin slices of lemon if desired).

Turn on the gas and place the frying pan. Cut the peeled and washed onion into rings or half rings.

Wash the pepper, peeled from seeds and stems, and chop into strips.

If the frying pan is hot, pour in vegetable oil and start working on the tomatoes — you just need to rinse them and, after drying them, cut them into rings, neither thick nor thin.

Is the oil hot? Fry the onion until it becomes transparent.

Place pieces of pink salmon in a greased form (on a baking sheet) and cover them with fried onions.

Afterwards, place the tomatoes on each piece. Spread them with mayonnaise and place pepper strips on it all. Season the top well with salt and spices — the juice from the peppers will reach the fish perfectly.

Grate Parmesan (or other hard cheese) on a coarse grater.

Cover the pan with foil and you are ready to bake. About 10 minutes before turning off the oven, sprinkle the contents of the mold on top with cheese and put it back in the oven for 5-10 minutes. Remove and place on plates!
