Basic:

Onion 0.5 pc
Olive oil 5 tbsp
Arugula 40 g
Ground red pepper 1 tsp
Cherry tomatoes 1 cup
Allspice to taste
Pickled cheese 80 g

How to make arugula salad with cherry tomatoes and cheese? Prepare all the necessary ingredients according to the list. Use young arugula for salad (i.e. small leaves); it has a milder taste than mature leaves. Drain it in a colander and hold it under running cold water. Next, place the leaves on paper napkins and blot them on top, this way you will get rid of excess liquid that is not needed in the salad. Place the arugula in a salad bowl.

Peel and rinse the onion. For vegetable salads, I prefer to use red onion, shallot or white onion. These onion varieties have a milder taste and go well with fresh vegetables. Cut the onion into thin feathers. Wash the cherry tomatoes, dry and cut into halves. Add onions and tomatoes to the arugula.

Next comes the turn of pickled cheese. Cut it into small cubes, or mash it into small pieces with your hands. Add to salad.

Sprinkle with ground red paprika, allspice and salt if necessary. Keep in mind that pickled cheese is salty, so you may not need salt. I didnʼt add salt to the salad. Drizzle a little vegetable or olive oil on top.

Garnish the salad with fresh herbs. Dill, parsley or green onions work well.

Before serving, the salad can be placed in the refrigerator to cool for a while. Then mix all ingredients thoroughly.
