Hearty Miner’s Salad with Pickles and Meat

A real manʼs snack — hearty and brutal! It’s not for nothing that the miner’s salad with pickles and meat received such a name — it contains a lot of meat, onions and spicy pickles, which men love so much. Preparing it is not difficult, especially if you boil the meat in advance.

Basic:

Garlic 2 clove
Cilantro, coriander to taste
Bay leaf 1 pc
Beef (or lean pork) 300 g
Bulb onions 1 pc
Vegetable oil 50 ml
Salted cucumbers 3 pc
Peppercorns 8 pc

How to make a classic minerʼs salad with pickles and beef? Prepare your food. Boil the meat in advance and cool. I used beef, but lean pork would also work. Take medium-sized cucumbers and large onions. Unscented, refined oil is suitable. Use spices according to your taste.

How to boil meat? Boil some water in a saucepan and place a piece of meat in it. In this way — lowering it into hot water — you will, as it were, seal the meat juice inside, making the meat much softer. Add salt, turn the heat to low. Cook beef for 40-50 minutes, pork for 30-40 minutes, depending on the thickness of the piece. Cool the finished meat in the same broth in which it was cooked. Then dry and cut the meat into thin strips.

Also cut the pickled cucumbers into strips — the salad will look more aesthetically pleasing.

Using the same principle, cut the onion into thin feathers.

To prevent the onion from becoming bitter in a dish, rinse it well in a sieve under water, and then squeeze out excess moisture with your hands. You can also pour hot water over it for 2-3 minutes, then place it on a sieve to drain excess water. If desired, you can marinate the onions in lemon juice and vinegar.

Place meat, cucumbers and onions in a salad bowl.

Pour vegetable oil into a thick saucepan or frying pan. Add peeled garlic cloves, bay leaves, pepper and coriander to it. Place the saucepan over medium heat and heat the oil. Focus on the garlic — it will turn brown. Do not overheat the oil or the spices will burn.

Pour the oil, trying to get it on the onion (it will be right on top). You can hold the spices with a spoon; they have already given off their flavor and will be superfluous in the salad. You can pour the oil through a sieve. Mix the ingredients. Cover the salad bowl with film and put it in the refrigerator for 12 hours — this will make the salad tastier.
