White cabbage 1 kg
bell pepper 1 pc

For the marinade:

Garlic 2 clove
Salt 1 tbsp
Sugar 3 tbsp
Ground coriander to taste
Water 100 ml
Bay leaf 2 pc
Table vinegar 50 ml
Vegetable oil 100 ml
Allspice 5 pc

How to quickly marinate cabbage with bell pepper? Prepare the necessary products. It is better to take late varieties of cabbage, it is sweeter and crunchier. Take table vinegar, 9%. If you only have vinegar essence, then dilute it with water to the desired concentration. Choose odorless oil, it will be superfluous in this recipe.

Remove the bad, spoiled leaves from the cabbage, wash it and finely chop it. It’s more convenient to do this with a special knife or grater, but you can do it with a simple knife. Place the chopped cabbage in a large bowl.

Wash the carrots, peel them, grate them on a coarse grater and add them to the cabbage.

Wash the bell pepper and remove the seeds. Cut the pepper into thin strips. Add the peppers to the rest of the vegetables.

Mix the cabbage with vegetables; it is more convenient to do this directly with your hands. There is no need to mash the cabbage; its juice will not be needed, since it will be covered in marinade.

Prepare the marinade. Take a saucepan, pour water and oil into it. Add salt and sugar, spices and bay leaf. Crush the peeled garlic cloves with the flat side of a knife blade and place in a saucepan with the rest of the ingredients. Place the marinade on the stove. When the marinade boils, remove the saucepan from the heat and immediately pour in the vinegar and stir. The marinade is ready.

Pour the marinade over the cabbage and mix it gently. The marinade is hot, be careful! Leave the cabbage on the counter for 15 minutes to allow the marinade to cool completely.

Transfer the pickled cabbage with bell peppers and carrots into glass jars and put them in the refrigerator. Since there is little marinade in such cabbage, it does not last long. It is better to make small portions and eat it right away. A kilogram of cabbage yields about two liters of the finished product. Bon appetit!
