Egg and Cucumber Squid Salad with Corn

Incredibly tasty, very simple, easy, without mayonnaise! Squid salad with egg, cucumber and corn from the category of everyday recipes, but with a festive mood. You can arrange it like I did, in layers or mix it in a salad bowl, topped with yogurt. This is a great snack!

Greenery (parsley, dill, lettuce) 30 g
cucumbers 1 pc

Yogurt 3 tbsp
Canned corn 150 g

How to make squid salad with egg, cucumber and corn? Very simple! Prepare the necessary ingredients. You can use squids already peeled, without skin or with skin. If you use unpeeled squid, you must first remove the skin and entrails. Take natural yogurt, the fattier and denser the better. If you wish, you can add 1 tbsp to the yogurt. l. mayonnaise for taste.

Boil the prepared squid carcasses. How to boil squid? Place the cleaned squid into salted boiling water. Cook them for 1-2 minutes. Donʼt cook any longer!!! Otherwise, the squid will become tough as rubber and completely tasteless.

Remove the squid from the water, pat dry and let cool. Then cut into strips.

Also cut the cucumber into strips.

Boil the eggs hard, cool and peel. Also cut the eggs into strips.

Drain canned corn. Dry the grains.

Wash the greens, dry and finely chop. My bunch of greens consists of parsley, dill and a few leaves of frillis lettuce. You can use other greens to taste: green onions, spinach, basil, etc.

If you donʼt have time, you can simply combine all the ingredients in a salad bowl, season with mayonnaise and mix. But I suggest serving the salad in a more elegant way by forming it in a culinary ring. Place a ring on a plate (mine is 16 cm in diameter). Place all the squids in the first layer and compact. Top the squid with salt, pepper and yogurt.

Place the cucumbers in the next layer and also sprinkle with spices and pour over yogurt.

After the cucumbers, place the eggs, which you also add salt and pepper and lightly pour over the yogurt.

The next layer is chopped greens. There is no need to season it with anything.

And add the last layer of corn. Tamp down the salad so that all layers are compacted and the salad does not fall apart when serving. Place the finished salad in the refrigerator for 30 minutes to soak.

Remove the cooking ring before serving. Decorate the salad as desired and serve. Bon appetit!
