Fresh Spring Salad with Olives, Tomatoes, and Tender Cabbage

Crispy, vitamin-rich and incredibly tasty. Very helpful! In the spring, when you especially want something with vitamins, I suggest making a salad with olives and tomatoes with young cabbage. It turns out to be bright in appearance and taste. During the season, when vegetables can be picked from the garden, the dish turns out especially tasty.

Recipe instructions

Step 1

Step 1
How to make a salad with olives and tomatoes with young cabbage? To prepare, you will need the following ingredients: young cabbage, bell peppers, tomatoes, cucumber, olives and onions with garlic. Wash the peeled onions and garlic and all the vegetables. Cut the bell pepper in half and remove the stem and seeds. Chop the cabbage into thin strips with a knife or on a special grater and place it in a salad bowl of a suitable size.

Step 2

Step 2
Cut the onion into feathers or half rings, as you prefer. For salad, it is better to use white lettuce or shallot; these varieties have a milder taste and are ideal for vegetable salads. Transfer the onion to the cabbage.

Step 3

Step 3
Next comes the turn of the bell pepper. For the beauty and brightness of the finished dish, peppers can be taken in different colors. Cut it into thin strips and add it to the onions and cabbage.

Step 4

Step 4
If the cucumber skin is not bitter or damaged, it is not necessary to cut it off. Cut it randomly into not very large pieces and add to the salad bowl.

Step 5

Step 5
Next comes the turn of tomatoes and olives. Choose tomatoes that are fleshy and dense, as soft ones will lose their shape when cut. Cut them randomly. Cut the olives in half. How to choose the right olives? It is better to buy the product in transparent packaging. This way you can look at them. If the olives are too black, it means food coloring has been added. The fruits should be elastic, whole, with shiny skin. Olives that are too soft will not be stored for long.

Step 6

Step 6
Chop the garlic finely with a knife, or pass it through a press or garlic press. Finely chop the greens (dill, parsley or fresh basil are good greens for salads). Combine garlic and herbs with the rest of the ingredients in a salad bowl, season with refined vegetable oil, salt to taste and squeeze the juice of half a lemon. Sprinkle the salad with allspice.

Step 7

Step 7
Before serving, mix the salad thoroughly, taste again for salt and, if necessary, add salt to taste. Let sit for about five minutes and serve. Enjoy your meal!
