Japanese Chuka Seaweed Salad with Homemade Nut Sauce

Do you like exotic things? Then this vitamin bomb from Japan is for you! Look. Chuka (or wakame) seaweed is a fairly popular ingredient in many traditional Japanese dishes. The Japanese are famous for their careful approach to food selection; their daily diet contains only healthy and necessary products, including chuka seaweed. Wakame can be bought frozen or pickled; they are a self-sufficient product in themselves; you just need to pour some dressing on them. I like chuka salad in combination with nut sauce, but since finding it is quite problematic, we’ll prepare it ourselves

Ingredients (4 portions)

For the salad:

Lemon juice 1 tsp
Water 50 ml
Sesame 1.5 tbsp
Starch 1 tsp
Soy sauce 50 ml
Seaweed 250 g
Sesame oil 1 tsp

For the sauce:

Sugar 1 tsp
Lemon juice 2.5 tsp
Water 3 tbsp
Mustard 0.5 tsp
Vegetable oil 2 tbsp
Sesame 1 tbsp
Soy sauce 3.5 tsp
Peanut 50 g
Sesame oil 0.5 tsp

Here are the necessary ingredients for chuka salad. If the seaweed is frozen, you need to defrost it first, but I took pickled seaweed. Chuka salad is essentially seaweed, tossed in dressing and sprinkled with sesame seeds. But first things first!

Fry the sesame seeds a little

Now add all the other ingredients to the wakama: sesame oil, soy sauce, lemon juice, water, starch, sprinkle with sesame seeds and mix everything. Thatʼs all — our chuka salad is ready! I repeat, you can eat it in this form. But it will be even tastier in combination with nut sauce.

And for it we will need: peanuts, sesame seeds, sesame oil, sugar, a little mustard, water, lemon juice and soy sauce (for some reason I forgot to photograph it). If you wish, you can add vegetable oil — I did, but it turned out a bit greasy for my taste, next time I will do it without it

Roast peanuts with sesame seeds

Grind in a blender for 2-3 minutes

Now add all the other ingredients. Rub for a few more minutes until smooth.

The sauce I got was quite thick, I like it this way. This is for everyone — the taste and consistency can be varied, if you want it more liquid — add some water, taste and add ingredients to your liking!
