Basic:

Olive oil 1 tbsp
Ground black pepper to taste
Apples 2 pc
Lemon juice 1 tbsp
Walnuts 5 pc
Carrot 2 pc
Cabbage 100 g
Sesame 1 tbsp
Balsamic vinegar 1 tsp
Green cilantro 25 g
Sea salt to taste

Grate 2 medium carrots.

Grate 2 medium green apples. Add lemon juice to prevent the apples from darkening.

Use a plastic knife to cut 4 medium kale leaves. Kale is a true superfood. It contains 9 out of 10 essential amino acids, more calcium than milk, and the amount of vitamin A in one glass of this cabbage is 2 times the norm.

We are preparing the dressing. Heat the walnuts in a dry frying pan. Very quickly, stirring constantly. This is necessary to reveal their aroma.

We transfer them to a mortar. I use a Japanese mortar — it is called suribachi and its uniqueness is in such internal grooves that significantly speed up and facilitate the process. You donʼt need to chop too much, just leave some chunks for a variety of texture. Combine with cold-pressed vegetable oil (olive or grape seed) — a tablespoon and a teaspoon of balsamic vinegar. Mix everything well.
