Recipe instructions

Step 1

Step 1
How to make spicy wings like KFC? Prepare your food. Wash the wings and cut them into phalanges at the joints.

Step 2

Step 2
Place them in a saucepan and add cold water to just cover the wings. Add a little salt and bring to a boil over low heat. Skim off the foam and boil the wings for no more than 5 minutes. Then remove the pan from the stove and leave them to cool without removing them from the broth.

Step 3

Step 3
While the wings are cooling, prepare the breading. How to make breading for frying wings? Grind the flakes in any convenient way. If you can’t find non-sweet ones, don’t experiment with sweet ones. An excellent replacement option is a dry loaf, but not ready-made breading.

Step 4

Step 4
Prepare the leison. What is lezon? This is a mixture of eggs and milk or water into which food is dipped before breading. How to make leison? Whisk eggs at room temperature and add salt. Add 100 ml of warm, but not hot milk and shake well. Then add spices and stir until the salt is completely dissolved.

Step 5

Step 5
Place the cooled wings on a wire rack or in a colander; there is no need to dry them. Then roll in flour, then dip into the leison and immediately into the breading. It is more convenient to do this with tweezers.

Step 6

Step 6
Place the breaded wings on a plate in a single layer, avoiding touching. Leave it like this for 10 minutes, during which time the egg will dry out and the breading will set well.

Step 7

Step 7
Heat a cauldron, pour in oil and heat it well over high heat. Read about how to choose the right vegetable oil in a separate article, links at the end of the recipe. Then reduce the heat to medium. Drop the wings in batches so that they float freely in the oil. The wings fry very quickly, 30-60 seconds on both sides. Remove the finished wings with a slotted spoon and place on a paper towel to remove excess fat.
