Ingredients (4 portions)

Basic:

Onion 1 pc
Salt 1 tsp
Carrot 1 pc
Celery root 150 g
Pork tongue 500 g

Marinade:

Garlic 3 clove
Chilli 0.5 pc
Lemon juice 50 ml
Honey 1 tbsp
Parsley 10 g
Vegetable oil 60 ml
bell pepper 1 pc
Soy sauce 50 ml

How to make pickled pork tongue? Very simple! To begin, prepare the necessary ingredients according to the list. You can replace the pork tongue with beef tongue. If you canʼt find celery root, substitute parsley root, celery stalks, or a dried root mixture.

Rinse your tongue thoroughly. Peel the carrots, celery root and onion. Boil water in a large saucepan. Place pork tongues, onion, carrots, celery root. Add salt. Bring the water to a boil and cook, skimming, for about 1.5 hours until soft. The exact cooking time depends on the size of the tongue and the intensity of the boil. Larger beef tongue takes longer to cook — 2-2.5 hours.

Place the finished tongue in a bowl of cold water and leave for 5-7 minutes. Then peel off the skin. Due to temperature changes, the skin can be peeled off quite easily.

Cut the tongue into slices no more than 1 cm thick.

Now prepare the necessary ingredients for the marinade. You can use any vegetable oil — I used aromatic unrefined sunflower oil.

Peel the bell pepper from seeds and stems and cut into small cubes.

Also remove seeds from the chili pepper and chop finely. If you want a spicier marinade, leave the seeds. There are two types of chili pepper: red is more spicy, green is less spicy. If you wish, you can omit the chili pepper altogether.

Finely chop the garlic with a knife or pass through a press.

Wash the greens, dry and finely chop. In addition to parsley, you can use any herbs to your taste: dill, basil, cilantro, etc.

In a bowl, mix honey, soy sauce, vegetable oil and lemon juice.

Add bell pepper, chili pepper, garlic and chopped herbs. Mix everything again.

Place the tongue slices in a bowl and pour over the marinade. Cover the bowl with cling film and refrigerate for 3-5 hours or overnight.
