This film is usually used for microwave ovens and products in such a film can be cooked. Ham can be prepared with the addition of nitrite salt (10 grams). This additive is a safe replacement for food nitrate. It gives the products a pink color and a ham-like taste.

Step 2

Step 2
Rinse the knuckle well under running water. Using a sharp knife, carefully cut the bone out of the shank.

Step 3

Step 3
Unfold the piece of meat into a layer. In a separate container, mix salt, pepper, paprika, nutmeg, chopped dried tomatoes. If desired, you can add nitrite salt. Rub the resulting mixture onto the meat. Peel the garlic and pass through a press or grate on a fine grater. Spread the garlic evenly over the meat. Sprinkle the shank with finely chopped dill.

Step 4

Step 4
Roll the shank into a roll and secure with thread, trying to give it a rounded shape. Rub the outside of the workpiece with salt.

Step 5

Step 5
Crush the remaining spices in a mortar. Break the bay leaf into pieces. Place cling film on a table or board and pour spices onto it. Place the roll on the spices.

Step 6

Step 6
Wrap the future ham tightly in several layers with cling film and leave in the refrigerator for 3 days if you are using nitrite salt. In the case of regular salting, marinate the shank for 24 hours. Place the marinated stock in a large saucepan, add water and cook for 3 hours over low heat.

Step 7

Step 7
Place the ham in a colander and pour ice water over it. Unopened, chill the shanks in the refrigerator for 3 hours.
