Oven-Baked Green Asparagus with Vegetables

Perhaps the most delicious and bright-tasting vegetables! The dish turns out very aromatic and appetizing! This plate of vegetables is sure to please many. On hot days they can be served chilled. Oven-baked vegetables are excellent as a separate dish, as well as as an addition to meat and potatoes.

Ingredients (2 portions)

Basic:

Garlic (1 large head) to taste
Olive oil 30 g
Salt to taste
Pepper (red or black ground) to taste
Dry spices (Provencal herbs) to taste
bell pepper (small) 3 pc
Cherry tomatoes 250 g
Green asparagus 250 g

Prepare all the necessary vegetables. Take a sprig of sweet aromatic cherry tomatoes, green young asparagus, mini bell peppers and garlic.

Rinse everything well and thoroughly in clean cold water.

From asparagus, cut off the thick stalks at the base; they are usually very tough and are not suitable for further cooking. I cut about 2 centimeters from each branch.

Separate the head of garlic into cloves. Rinse the unpeeled garlic in clean water and then dry with paper towels. Press down on each clove with a knife to flatten it slightly.

Place the cloves in a baking dish (I usually use a glass or ceramic dish for this dish). Drizzle the garlic with a little olive oil and lightly salt and pepper. Place the pan in the preheated oven (set top-bottom mode, temperature 200 degrees), bake the garlic for 20 minutes.

Use a toothpick to poke several holes in the tomatoes and peppers.

Carefully remove the pan from the oven (be careful not to burn yourself!). Add cherry tomatoes, bell peppers and asparagus to the baked garlic. I cut each asparagus spear in half because whole spears didnʼt fit in the pan. Drizzle a little olive oil over the top again, add salt and pepper to taste.

I usually add a pinch of nutmeg and a mixture of herbs de Provence, they go well with vegetables. Place the pan back in the oven and bake for about 30 minutes.
