Chicken Pumpkin Pasta Delight

Pasta with chicken in a sweetish pumpkin sauce. The dish has an original taste and is not at all difficult to prepare. I had regular pasta, but you can use bows and shells — then it will be even more beautiful. A good dish for a hearty lunch.

Ingredients (5 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Salt 3 g
Vegetable oil (for frying) 10 ml
Chicken 250 g
Pumpkin 500 g
Pasta 250 g
Thyme, thyme 2 g

Cut the onion into quarter rings, the pumpkin into cubes, finely chop the garlic.

Boil the chicken in salted water, do not discard the broth.

Fry onion and garlic in vegetable oil until translucent.

Add the pumpkin to the onion, sprinkle with thyme and fry for about 5 minutes.

Add 200 ml chicken broth and simmer for 20 minutes until soft. Add salt to taste during the process.

Mash the prepared pumpkin into a puree.

Cut the chicken meat into arbitrary pieces and lightly fry.

Boil the pasta in the remaining broth. If it is not enough, add water. Cook until almost done. It is important not to overcook so that they keep their shape well. Donʼt throw out the pasta water; you may need it.

Mix pasta, chicken and puree. If the puree is too thick and difficult to stir, add pasta water, I needed about 150 ml.
