Pork 800 g

How to make meat with mushrooms and tomatoes in the oven? Prepare your food. It is better to take soft parts of pork — tenderloin, neck, loin. You can take a loin on the bone if it is chopped in portions. Take any mushrooms — wild mushrooms, champignons, oyster mushrooms. Large and juicy tomatoes are best, but I often replace them with canned chopped ones. Soft varieties of cheese are feta cheese, feta, suluguni, ricotta.

Wash and dry the meat. Cut the pulp into portions. Cut the meat only across the grain — this will make it softer after processing. Sliced lengthwise, the meat becomes coarse and tough. Beat the meat with a hammer. To avoid splashing everything around, I advise you to cover the pieces with film or a bag and beat them directly through them. Then salt the pieces and season with spices.

Peel the onion and cut into quarters.

Wash the mushrooms carefully or simply clean them of dirt. Cut them into thin slices.

Heat a frying pan over low heat. Pour oil on it. Add onion. Fry the onion for 5 minutes until golden brown. Add mushrooms. Fry the mushrooms without a lid along with the onions until golden. Finally, add a little salt to the mushrooms.

Take a baking dish. Place pieces of meat on the bottom. Place a layer of mushrooms and onions on top.

Then add the tomatoes. If you, like me, use canned ones, just add them along with the juice. If you have fresh tomatoes, first cut them into small pieces. You can also remove the skin from the tomatoes. Salt this layer. My tomatoes already have salt, I didn’t add any salt.

Cut the cheese into small cubes. Place it between the pieces of meat. I was a little wrong here. I should have drowned the cubes in the tomatoes instead of leaving them on top. The cheese has baked a little and become hard. Keep this in mind when preparing.

Bake the meat in the oven at 180°C for about an hour. Serve the finished meat in portions, pouring over the resulting gravy.
