Ingredients (8 portions)

Basic:

Garlic 15 clove
Salt to taste
Sugar 1 tbsp
Ground black pepper to taste
Orange juice 0.5 l
Bulb onions 4 pc
Pork 1.5 kg
Oregano dry 1 tbsp
Lime juice 4 tbsp
Cayenne pepper (1-2 pinches) to taste
Grapefruit juice 0.2 l

It is better to choose boneless shoulder or ham for pork.

Peel the garlic and onion, cut the onion into rings, chop the garlic. Squeeze juice from citrus fruits.

Make the marinade: combine juice, sugar, garlic, cayenne pepper, oregano. Season with black pepper and salt. Mix.

Rub a piece of meat with salt and ground black pepper; you can make small cuts so that the salt penetrates into the middle of the piece. Place the onion in a baking dish, followed by the prepared pork. Bake in a well-heated oven until golden brown for about half an hour.

Then reduce the heat to minimum, pour the marinade over the meat, cover with foil and simmer for about another 6-7 hours, sometimes pouring the marinade over the meat.
