How to make beef liver chops? Prepare all the necessary ingredients. If you wish, you can take, for example, pork liver, but I prefer beef liver. Take milk of any fat content. It is best not to defrost the liver until the very end; in this case, it will be better to cut it into portioned pieces.

Remove the thin film on the surface of the liver. It is she who compresses a piece of liver during cooking. If the film is difficult to remove, pour hot water over the liver, not boiling water, and then everything will work out without difficulty. Also remove all veins and ducts. Wash the liver and dry it with paper towels.

Cut the liver, if possible, into equal pieces about one centimeter thick. If you have not completely thawed the liver, it will cut easily with a knife.

Place the liver pieces in a deep bowl and fill completely with milk. The liver will be soaked and become more tender and tasty. Place the bowl in the refrigerator and leave everything for 3-4 hours.

Pour flour into a separate clean bowl, add salt and black pepper, stir. Salt the flour, not the liver. Why do you need to salt flour? Because as soon as you salt the liver itself, it will become tough.

Remove the liver from the milk, shake off any remaining residue, and beat the liver itself a little. Do this slowly, covering the meat with cling film — the liver is a very delicate product, it is easy to destroy.

Carefully transfer the livers to the bowl with the flour mixture and coat thoroughly on all sides.

Pour vegetable oil into a thick-bottomed frying pan and heat over medium heat. Place the liver chops in the hot oil and fry on one side for about 5-6 minutes.

Pour water into the pan and close the lid. Cook for another 2-3 minutes and serve immediately. It is best to pour hot water into the frying pan so that there is no temperature difference, which does not have a very good effect on the taste and softness of the liver.
