Cutlets in sour cream are a variant of the usual cutlets fried in a frying pan, which are finally stewed in a saucepan with the addition of sour cream. This makes them much juicier, more aromatic and tastier. Sour cream turns into a wonderful thick sauce.

Basic:

Garlic 5 clove

Sour cream (for extinguishing) 200 g

Vegetable oil (for frying) 200 ml
Pork 500 g
Bread 50 g
Flour (for breading) 150 g

How to make cutlets in sour cream? First of all, prepare the minced meat. How to make minced meat? Wash the meat, dry it and cut it into small pieces with a sharp knife. Place the meat in a blender bowl and grind well. You can also use a meat grinder for this. The minced meat should be quite fine and homogeneous. I made it with pork, but beef and chicken will work as well.

Chop the onion with a knife, but it is more convenient to immediately pour it into the blender bowl along with the meat. Soak the bread in cold water. You can use any bread (loaf), I used black, but you can use white or gray. It is better to use day-old bread than fresh bread and cut off the crusts. When the bread is well soaked, squeeze out any excess liquid. Add chopped onion, bread crumb, salt, ground black pepper and garlic squeezed through a press to the minced meat.

Mix everything well and add the egg yolks. Knead the minced meat again until smooth. You can even beat the minced meat in a bowl, it will become even more tender.

Scooping up a tablespoon of minced meat with wet hands, form it into oblong or round cutlets. Dredge cutlets in flour.

Heat a frying pan with vegetable oil over medium heat. Place a portion of cutlets and fry them for 10 minutes on each side until golden brown. Fry all the cutlets in the same way.

When all the cutlets are fried, transfer them to another container, for example, a saucepan. Pour a small amount of boiling water into the frying pan — this will be the gravy. Pour it into the pan with the cutlets. Pour sour cream on top of the cutlets. You can add three bay leaves for taste. Cover the pan with a lid and simmer over low heat for about 20 minutes. Serve the finished cutlets with any side dish or vegetables. Bon appetit!
