Salt to taste
Water 300 ml
Rice 100 g
Eggs 1 pc
Sour cream 200 g
Tomato paste 1 tbsp
Vegetable oil 20 g
Dry spices to taste

How to make hedgehogs from minced chicken with rice in a frying pan? Prepare the necessary ingredients for this. You can use any part of boneless chicken for cooking. I take chicken thigh fillet — it turns out juicier than breast fillet. You can use sour cream of any fat content. The higher the fat content of sour cream, the creamier the taste of the finished dish will be.

Boil the rice in boiling water until half cooked, 5-7 minutes. Then drain in a colander to drain excess water.

Pass the chicken meat through a meat grinder and turn it into minced meat.

Place the minced meat in a suitable bowl and add boiled rice to it. Break the egg. Add salt and spices to taste. As a spice, I use a ready-made chicken spice kit.

Mix all ingredients thoroughly until a homogeneous mass is obtained. Beat the mixture against the bottom of the bowl to make it denser. Thanks to this, the finished hedgehogs will not fall apart during cooking.

Heat a frying pan until hot and pour a little vegetable oil on it. Form the meat mixture into balls, place in a frying pan and fry on all sides until lightly browned.

Separately, mix sour cream with water and tomato paste. Add some salt.

Pour the resulting sauce over the meat hedgehogs, bring everything to a boil and simmer under the lid over low heat for 25-30 minutes. During cooking, turn the hedgehogs a couple of times so that they are evenly soaked in the sauce.
