How to fry juicy pork in a frying pan? Prepare everything you need. To make the meat tender and juicy, use neck, shoulder, ham or tenderloin. Choose your meat carefully. It should be pink in color, without an obsessive odor and excessive shine. It tastes better from fresh meat, but if you have frozen meat, defrost it first. Rinse the meat in running water and dry with paper towels so that there is less splashing during frying and a more uniform golden brown crust appears on the surface. Trim off excess fat. Cut the meat into large cubes no smaller than a matchbox. Try to leave the larger cut side of the piece across the grain. This way more juice will remain inside.

Fry on both sides until golden brown. It took me about 4 minutes on each side. Salt the already fried side. Place the finished pieces in a deep bowl, cover with a lid and let “rest” until the meat is ready.
