How to make Rainbow Cream Cake at home? Prepare your food. First to prepare the cakes. Choose the most natural and high-quality butter, without vegetable fats, that complies with GOST. Since the cake consists of 6 layers of different colors, we will bake them separately. You can only bake two cakes at a time. Therefore, I advise you to first knead half of the dough, bake two cakes, and then knead the second half and bake 4 cakes in two batches. This way the dough wonʼt stand for too long. How to make the dough? Beat soft butter with sugar and vanilla until fluffy and light. Continuing to beat, add eggs one at a time.

Sift the remaining half of the flour into the dough. And stir the dough again with a mixer. You should get a homogeneous thick dough. Using a scale, divide it into 3 equal parts (since we are kneading half the dough first). Add a few drops of food coloring to each part. And stir the dough thoroughly with a spatula, achieving a uniform color.

Take shapes of the same size. I have two rings with a diameter of 18 cm. I made the bottom out of foil and placed them on a baking sheet. There is no need to grease the molds. Pour dough of different colors into them, spread with a spatula along the bottom. Bake the cakes for 15-20 minutes in the oven at 180°C. While the first two cakes are baking, begin kneading the second half of the dough. Paint the remaining three cake layers in the same way. Bake them and one from the first batch in two batches.

Carefully remove the finished cakes from the molds and cool. I baked them ahead of time, so I wrapped them in cling film and put them in the refrigerator overnight. The cakes cooled in this way do not crumble.

You can use any frosting you like for the rainbow cake. I will prepare cream from curd cheese. Prepare food for him. Choose cream cheese, without additives. Use the highest quality and natural butter, complying with GOST, without vegetable additives. It is powdered sugar that is used in the cream, since it, unlike sugar, will not be felt in it.

All products for the cream should be warm, at room temperature, and the butter should be soft. Place them in a bowl and beat with a mixer at low speed until fluffy and homogeneous. Just in case, try the cream. If you find there is not enough sweetness, add more powder.

Assemble the cake. Place the cakes on top of each other according to the colors of the rainbow — the bottom one is purple, then blue, green, yellow, orange and the top one is red. Layer each cake with cream, about two tablespoons per cake.
