For dough:

Salt 0.25 tsp
Wheat flour 300 g
Water 150 ml
Chicken eggs 1 pc

For filling:

Sugar 2 tbsp
Cinnamon 0.5 tsp
Nutmeg 0.5 tsp
Butter 30 g
Pears 2 pc

For the buttercream frosting:

Sugar 125 g
Butter 0.5 tsp
Vanilla sugar 0.5 tbsp
Heavy cream 125 ml

To grease the strudel:

Eggs 1 pc

For decoration:

Almond petals 2 tbsp

How to make pear strudel with creamy glaze? First, prepare the ingredients for the dough. Sift the flour into a deep bowl, make a well in the center, pour warm water into it and add salt. Knead the dough. Beat in a C2 category chicken egg and continue kneading the dough. To make the dough elastic, knead it with your hands for 10 minutes. Cover the finished dough with cling film and leave to “rest” for 30 minutes.

Prepare the ingredients for the filling. Cut the washed pears into small cubes, place in a frying pan and fry in butter. While frying, add granulated sugar, nutmeg and ground cinnamon, stir and let the pears caramelize.

Knead the dough with your hands and use a rolling pin to roll it into a very thin rectangular layer.

Place the aromatic pear filling on the rectangular layer of dough, leaving the edges of the dough empty, and wrap the dough into a roll, folding the edges so that they completely cover the filling. During baking, the filling should not leak out of the strudel. Make notches on top.

Place the assembled strudel on a baking sheet, covering it with baking paper or placing a special baking mat on it. Beat the egg and brush the strudel with it using a pastry brush. Place the baking sheet with the strudel in an oven preheated to 180 degrees and bake for about 40 minutes. The exact time depends on your oven. Prepare the ingredients for the glaze. Pour 20% cream into a thick-bottomed ladle, add sugar and bring everything to a boil. Then reduce the heat and cook the glaze for about 20 minutes, stirring constantly. At the end of cooking, add butter and add vanilla sugar, stir and remove the ladle from the heat. Remove the finished strudel with pears from the oven, transfer it to a board, pour over the hot creamy glaze and sprinkle with almond petals. Cut the strudel into portions and serve with tea. Bon appetit!
