Recipe instructions

Step 1

Step 1
How to fry liver pancakes with carrots and onions? Prepare all the necessary ingredients. It is better to use fresh liver — it will make the pancakes softer and more tender. You can make pancakes from any liver; pork, beef, chicken or turkey. I have pork liver. Kefir is suitable with a fat content of 2.5% and higher.

Step 2

Step 2
Rinse the pork liver, dry it, remove all films and ducts and cut into small pieces.

Step 3

Step 3
Wash the carrots, peel and cut into small cubes.

Step 4

Step 4
Peel the onion and cut into cubes.

Step 5

Step 5
Pass the pork liver along with carrots, onions and herbs through a meat grinder or grind in a blender. If you have a small blender, then it is better to grind the liver in parts, since a large volume is difficult to grind and the device may overheat. If you have a kitchen machine, you can grind the entire volume of liver in it.

Step 6

Step 6
Add kefir, egg, ground pepper and salt to the liver mass. Mix everything well.

Step 7

Step 7
Add flour and mix thoroughly. Leave at room temperature for 15 minutes to thicken.

Step 8

Step 8
Heat a little vegetable oil in a frying pan over medium heat, spoon out the liver dough and form into small round pancakes. Fry for about 4 minutes on each side until golden brown, periodically adding vegetable oil. The exact frying time depends on the thickness of your pan, the strength of the heat, and the consistency of the liver dough.

Step 9

Step 9
The inside of the pancakes should be brownish in color. Well-done pancakes should have no blood inside or outside (unless you prefer this level of doneness). Transfer the finished pancakes to a plate and serve. Absolutely any side dish will go with them. Bon appetit!
