Very tender, very tasty, for the whole family! Delicate cottage cheese pancakes with eggs in a frying pan at first glance seem ordinary and classic. But their trick is that I add flour to the still dry cottage cheese and each grain seems to be enveloped and the dough remains airy and does not clog.

How to make tender cheesecakes from cottage cheese? Cottage cheese can be of any fat content. But fatty cottage cheese will taste better. Mash the cottage cheese with a fork so that there are no lumps, add sugar or a sweetener that is not afraid of heat treatment, salt, vanillin (on the tip of a knife) or vanilla sugar (about 1 tbsp), mix. Add 3-4 tbsp. l. sifted flour, add the egg and mix again. Or you can immediately mix all the ingredients at once, as you like.

The dough should hold its shape well and be very soft and tender. Since the cottage cheese may be drier or wetter, you may need less or more flour. Sprinkle your work surface with flour. Roll the sausage and cut it into equal rounds with a diameter of approximately 2-3 cm. Roll each piece on both sides in flour, slightly flatten it, leveling the shape. Or form the cheesecakes with wet hands and then roll them in flour.

Pour vegetable oil with a high smoke point into the frying pan. Reheat well. Lay out the cheesecakes. Shake off excess flour from them first so that it does not burn and spoil the appearance. Fry them on both sides until golden brown. Reduce heat to low and cook the cheesecakes under the lid until cooked (about 1-2 minutes). Serve cheesecakes warm with sour cream or other favorite sauce.
