Fluffy Raisin Buns with Citrus Glaze

The buns are airy, soft, tender, sweet and very tasty! Both children and adults like these buns. Good for breakfast with almost any drink. Many housewives are afraid to cook with yeast dough, but I tried to film it in detail so that everything works out for you. Most of the time is spent on rising the dough, proofing, and the buns are baked very quickly. They will be soft on the second day, the orange glaze will not only decorate them, but will give a soft taste and aroma of your favorite citrus. Try it!

Ingredients (12 portions)

Dough:

Wheat flour 560 g
Eggs 2 pc
Milk 300 ml
Butter 80 g
Dry yeast 6 g
Sugar 100 g
Salt 0.4 tsp

Filling:

Butter 40 g
Raisin 200 g

Glaze:

Oranges 1 pc
Powdered sugar 180 g

For lubrication:

Eggs 1 pc
Vegetable oil 1 tbsp

Prepare the products, everything should be at room temperature.

Pour the heated milk (slightly warm 35-38 degrees) into the mixture of yeast and sugar, stir a little and leave for 10 minutes. Partial dessert or tsp. Leave the milk for greasing.

Break 2 eggs into a bowl, add salt and the remaining sugar, beat lightly with a whisk.

Pour the sifted flour into a separate deep bowl and make a well. Pour in the mixture of liquid ingredients, knead the dough, kneading with your hand.

At the end of kneading, add the cooled butter, continuing to knead.

Knead the dough for 10-15 minutes. At first it will be smooth and light, then it will start to stick to the bowl and hands. To make kneading easier, sometimes dip your fingers in vegetable oil. Yeast dough loves your hands very much — try it! At the end of kneading, the dough will come together into a ball, become smooth and will not stick to the walls of the bowl. For convenience, you can knead on the table.

Grease a bowl with vegetable oil, round the dough, place in the bowl and cover with a napkin. Leave to rise for 1 — 1.5 hours in a warm place./I heat the oven at minimum temperature — for me it’s 50 degrees. I turn it off, let it cool a little with the door slightly open and place the bowl on a wire rack on the 2nd lower level. Ideally, the temperature should be 35 degrees. When there is not much dough, you can use a slow cooker./

While the dough is rising, prepare the raisins: Pour boiling water over the raisins for 15 — 20 minutes, rinse, and dry on a towel.

Lightly dust the board with flour and turn out the dough, lightly shaping it into a roll. Divide the dough into 16 parts, about 60-65g. Round each piece by tucking the dough down.

Prepare the orange glaze: Grate the zest of 1 orange into the powdered sugar and mix. Add orange juice little by little and stir well. Adjust the thickness of the glaze to your taste; if it turns out runny, add more powdered sugar.
