Step 1

Step 1
How to make curd Viennese waffles in a waffle iron? Prepare the necessary products. The butter must be taken out of the refrigerator in advance so that it is soft. Use moderately dry cottage cheese, adjust the fat content to your taste. If you have coarse-grained cottage cheese, it is better to first rub it through a fine sieve or punch it with a blender. Sift flour with starch and baking powder in advance. How to choose cottage cheese, read the article at the end of this recipe.

Step 2

Step 2
It is advisable to knead the dough using a mixer, this will make it much easier to achieve a homogeneous consistency. In a deep bowl, combine softened butter, sugar and vanilla sugar. Using a mixer at high speed, mix everything well.

The mass should be dense. It should keep its shape well.

Add eggs to the curd mixture one at a time, beating the mixture well with a mixer each time.

Step 6

Step 6
Add the sifted flour, starch and baking powder into the dough in parts, kneading it each time with a spatula or whipping it with a mixer.

Step 7

Step 7
The dough should be thick and homogeneous. Depending on its properties, you may need a little less or more flour. Read about the properties of flour in the article at the end of this recipe.

Step 8

Step 8
Preheat the waffle iron well. If desired, you can grease the waffle iron plates with vegetable oil. I donʼt do this because there is a lot of oil in this dough. Place 1 tablespoon of dough onto the heated pans. Bake Viennese waffles with cottage cheese for 5-7 minutes, but be sure to use your waffle iron as a guide, as they all have different capacities.
