Salt to taste

How to make chuk-chak with honey in Tatar style at home? Prepare the necessary ingredients. Sift the flour so that it is saturated with oxygen. This will make the dough more tender. Beat the eggs into a deep bowl, add a pinch of salt and beat with a fork or whisk until smooth.

Gradually adding flour, knead the dough. Transfer the dough from the bowl to a floured work surface and continue kneading it with your hands. The dough should be quite tight and not sticky to your hands. You may need a little more or a little less flour. Form the dough into a ball, cover with cling film to prevent it from drying out and let it rest for 20 minutes.

Divide the rested dough into 2 equal parts. Roll one of them with a rolling pin into a thin round cake, approximately 2 mm thick. The dough is not very pliable, it will always strive to shrink back, so when rolling it out you will have to make some effort. Roll from the middle to the edges. Make sure that the dough does not stick to the work surface — if necessary, turn it over to the other side and dust it with flour.

Cut the resulting cake into strips approximately 5 cm wide. It was more convenient for me to make cuts at a slight angle — obliquely.

Now you need to cut each strip crosswise into strips. You can cut the sticks thinner or thicker — I cut strips 1 cm wide. Do the same with the second half of the dough.

Heat vegetable oil in a frying pan over high heat. For information on how to choose the right oil, read the article at the link at the end of the recipe. You can check whether the oil is hot enough using a wooden spatula by lowering it into the oil. If the oil around it hisses and foams, it means it has warmed up enough. Reduce the heat to moderate and place a portion of the ingredients in the frying pan. Fry on both sides for about 3 minutes until lightly golden.

Use a slotted spoon to place the fried dough onto a wide dish lined with a paper napkin to drain off excess fat.

Prepare the syrup. To do this, mix sugar and honey in an iron bowl or saucepan. Bring the mixture to a boil over medium heat, stirring constantly with a spoon, boil for a couple of minutes and remove from heat.

Place the sticks in a deep bowl and pour hot syrup over them. Mix everything well. Transfer the chak-chak to a plate and refrigerate until the caramel hardens. Homemade cha-chak is ready. Bon appetit!
