Vegetable oil 80 g

How to make a simple kefir sponge cake for a cake in the oven? Prepare the necessary ingredients. Be sure to sift the flour to saturate it with oxygen. Remove chicken eggs and kefir from the refrigerator in advance so that they have time to warm up to room temperature.

Mix flour, soda and baking powder. Mix well.

Beat three eggs into a separate container, add sugar (or a sweetener that is not afraid of heat treatment) and beat well with a mixer at medium speed for about 10 minutes. The egg mass should turn white and thicken. Pour in refined vegetable oil and kefir. I recommend heating the kefir a little. Continue beating the egg-kefir mixture until smooth and bubbles appear on the surface.

Add all the flour mixture at once. Since flour differs in its properties, its quantity may be required a little more or less. Focus on the desired consistency.

Beat the mixture with a mixer at medium speed. The consistency of the dough should be smooth, homogeneous, similar to thick sour cream. Leave the dough in a warm place for 5 minutes to activate the baking soda.

Line a cake pan (diameter 18 cm) with baking paper, grease the bottom and sides with a piece of butter to prevent the sponge cake from burning. Just in case, wrap the outside of the pan with foil. Pour the dough and smooth the surface with a silicone spatula.

Cover the top of the dough with foil. Place the form with the dough in an oven preheated to 180 degrees. Bake for about 1 hour. Everyoneʼs oven is different, so baking times may vary. Check the readiness of the biscuit with a dry wooden skewer or toothpick. Pierce the biscuit with it in several places; if it comes out dry, it’s ready. Remove the pan from the oven and leave to cool for 5 minutes. Release the cake from the pan and cool completely on a wire rack.
