Basic:

Salt 0.5 tsp
Sugar 0.5 tsp

Hard cheese 200 g
Vegetable oil 2 tbsp
Dill 7 g
Soda 0.5 tsp
Kefir 200 ml
Adyghe cheese 150 g

Recipe instructions

Step 1

Step 1
How to fry cheese cakes with kefir in a frying pan? Prepare the necessary ingredients. You can take kefir of any fat content, it should be at room temperature. Any hard or semi-hard cheese will do. You can vary the proportions of Adyghe and hard cheese as desired. Take premium flour, it will make the dough softer. Wash and dry the greens.

Step 2

Step 2
Sift the wheat flour into a separate wide container. This will saturate it with oxygen and make the baked goods more airy.

Step 3

Step 3
In a stable, deep bowl, mix kefir and soda. Leave for 5-10 minutes for the soda to extinguish. Noticeable bubbles will appear on the surface of the kefir.

Step 4

Step 4
Grate the hard cheese on a medium or fine grater.

Step 5

Step 5
Add salt, sugar and half the grated cheese to the kefir and mix.

Step 6

Step 6
Pour most of the sifted flour into the cheese mixture, stir the dough with a spoon.

Step 7

Step 7
The dough turns out very sticky and viscous.

Step 8

Step 8
Add the rest of the flour in parts, stirring the dough each time. Now knead the dough with your hands, controlling its consistency. Please note that you may need more or less flour than I did. Focus on the consistency of the dough.

Step 9

Step 9
The dough should be very soft, tender, elastic, slightly sticky to your hands. If the dough is too sticky, add a little more flour. But you shouldn’t add a lot of flour so that the dough isn’t too tough. Otherwise, the cakes will turn out to be hard. Cover the dough to prevent it from drying out and leave to rest for 30 minutes.

Step 10

Step 10
Grate the Adyghe cheese on a medium grater or crumble it with your hands.

Step 11

Step 11
Finely chop the washed dill. You can also take parsley, cilantro or basil. Greens will give the flatbreads a spicy taste and aroma.

Step 12

Step 12
In a convenient-sized bowl, combine the Adyghe cheese, the remaining hard cheese, and chopped dill. Mix everything well.

Step 13

Step 13
Sprinkle the table with flour, divide the dough into equal parts of the desired size — according to the number of future flat cakes.

Step 14

Step 14
Roll the filling into balls according to the number of pieces of dough. The cheese mass is easy to mold.

Step 15

Step 15
Roll each piece of dough into a round cake.

Step 16

Step 16
Place a ball of cheese filling in the middle of the flatbread.

Step 17

Step 17
Lift the edges of the flatbread, gathering the dough around the filling, pinch well.

Step 18

Step 18
Gently knead the resulting ball with your palm and roll it into a flat cake.

Step 19

Step 19
Heat a little vegetable oil in a frying pan. Fry the flatbread over medium heat on one side until golden brown.

Step 20

Step 20
Then turn over and fry on the other side. While the tortilla is frying, form the next tortilla, remembering to monitor the process in the pan.

Step 21

Step 21
Place the finished cheese cakes in a heap on a plate to keep them warm longer. I got 8 cakes with a diameter of about 10 cm.

Step 22

Step 22
Flatbreads can be served with tea or milk or as a first course as an alternative to bread. Bon appetit!
