How to make tiramisu dessert with cookies? Prepare your food. You can use either store-bought or home-baked cookies. Brew the coffee in advance and cool it, it should be strong and aromatic. Choose high-quality, natural mascarpone, without vegetable additives, the taste of the dish will depend on this. I deliberately reduced the number of eggs in the ingredients, although I prepared it with 6 — as a result, the cream turned out to be runny. 4 will be perfect.

Wash the eggs well and dry. Since they will not be subjected to heat treatment, choose carefully — the eggs must be the freshest, from a trusted manufacturer. Separate the eggs into yolks and whites, being careful that not a drop of yolk gets into them — otherwise the whites will not whip.

Start beating the yolks with a mixer, gradually adding sugar. You can reduce its amount to your liking. This quantity will appeal to those with a sweet tooth. Beat the yolks until light and fluffy.

Add mascarpone to the beaten yolks and stir it in. If there are any lumps left, use a whisk or mixer, just mix at low speed and not for long.

In a separate bowl, beat the egg whites until stiff peaks form. In order for the whites to beat well, the eggs must be fresh and chilled (from the refrigerator), and the dishes for whipping must be dry and clean, without traces of fat. For better whipping, you can add a small pinch of salt to the whites. Beat the whites with a mixer at minimum speed, increasing the speed as you beat. Properly whipped egg whites will not fall out of the bowl when turned over.

Very carefully begin to fold the whipped whites into the cheese mixture. Place them in small portions and stir with a spatula using upward movements. As a result, you will get a homogeneous and very fluffy cream.

Pour the cooled coffee into a flat plate with sides; you can add cognac, rum, or liqueur to it if desired. Since my tiramisu is also intended for children, it is alcohol-free. Take a suitable form, mine is size 31*17, but you can take a slightly larger one — mine didn’t fit a few cookies. Just for a second, dip the cookies in the coffee and place them in rows in the mold. Overly soaked Savoiardi will soften in dessert and will not hold its shape.

Place half the cream on top of the cookies and spread evenly.

In the same order as the bottom layer, lay out the second row of Savoiardi. This is important so that when serving you get a beautiful cut.

Spread the other half of the cream onto the cookies. Level it out. Place the dessert in the refrigerator for at least 4 hours, or better yet overnight — then it will be better soaked and will keep its shape well.
