Creamy Caramel Delight

This dessert is the perfect way to finish off your Valentineʼs Day dinner! Very tasty and very tender dessert. Traditionally it is prepared only with milk, but adding cream gives the dessert a richer, creamier taste! It is very important not to burn the caramel as this can completely ruin the taste of the dessert, so keep a close eye on it!

Ingredients (6 portions)

Basic:

Sugar 100 g
Milk 350 ml
Eggs 1 pc
Egg yolks 2 pc
Cream 200 ml
Vanilla sugar 1 tsp

For the syrup:

Sugar 160 g
Water 60 ml

First, cook the syrup. Bring the water to a boil and add sugar. Bring the mixture to a boil and the sugar is completely dissolved (until the mixture boils, you can stir it lightly with a spoon).

Cook the syrup over medium heat until it has a rich caramel color (do not stir the caramel while cooking!!!). During cooking, carefully monitor the caramel; if it is overcooked, bitterness may appear in the dessert!

Pour the finished caramel into the bottom of 6 ceramic molds.

Mix the cream and milk and bring to a boil (no need to boil the mixture).

Mix 1 whole egg and 2 yolks with sugar.

While constantly stirring the egg mixture, pour the hot mixture of cream and milk into it.

Strain the mixture through a fine sieve to remove any air bubbles. This is very important; when finished, the cream caramel should have a delicate creamy consistency.

Pour the mixture into the molds (fill them 3/4 full). If air bubbles form on the surface, scoop them out with a spoon. To bake the cream caramel you will need a deep baking tray. Pour boiling water into the bottom of the pan; it should reach halfway up the height of the molds. Bake in an oven preheated to 160 C for about 45 minutes. The finished cream caramel “shakes” slightly, but it is not liquid.

Let the finished dessert cool completely and sit in the refrigerator for at least 4 hours (or better yet, forget about it all night). Before serving, to make the dessert come out of the mold easier, dip it in boiling water for 30-40 seconds. Bon appetit!
