How to make Cockerel lollipops on sticks at home? Prepare the necessary ingredients. It is better to take fine white sugar. The proportions of sugar and water must be strictly observed. Citric acid is needed to prevent sugar from crystallizing and also to balance the taste so that the candies are not cloying. If desired, you can add dyes and flavors, but they are added at the very end to the finished caramel.

Grease the lollipop mold in advance. It is very important to lubricate all the small parts well, otherwise the candies may stick and be difficult to remove. You can lubricate with both vegetable oil and butter. Iʼve tried both options. Vegetable oil is not noticeable, but butter gives the candies a slightly creamy aroma. Then place the mold in the refrigerator to cool for a few minutes.

Pour sugar into a thick-bottomed ladle and pour in a tablespoon of water, mix everything thoroughly. While constantly stirring, avoiding burning, heat the resulting mass over low heat and bring to a boil. After boiling, foam forms abundantly. It is not necessary to remove it; it will settle later. Add citric acid or half a teaspoon of lemon juice and then, without stirring, bring the mixture to readiness.

To determine if the caramel is done, use a glass of cold water. The mass is ready if a drop of boiling solution poured into cold water forms a solid and non-crumbling piece.

The finished caramel turns out to be a beautiful amber color. Set it aside for 1-2 minutes to allow the foam to settle.

Pour the hot caramel into the nests of the assembled, stapled and pre-cooled mold.

When the mass has set (hardened) a little, insert wooden sticks.

If you don’t have a special metal mold for lollipops, you can use silicone ice molds. And instead of wooden sticks, lollipop sticks, skewers and even matches are suitable.

Leave the lollipops for about 1 hour to completely harden. Then remove the clamps, open the mold and remove the finished candies. To make the lollipops easier to get out, the mold needs to be heated by immersing it in boiling water for a few seconds so that the water does not touch the candy mass. Bon appetit!
