How to make a tomato and cheese pie? Prepare the necessary ingredients for this. You can use any cheese you like, the main thing is that it can be easily grated. Choose medium-sized tomatoes (if desired, you can also take cherry tomatoes, they have more delicate skin). The butter should be hard.

Sift the flour through a sieve to saturate it with oxygen. Add sugar, salt and a little thyme to the flour. Rub the dried thyme leaves a little in your hands to chop them as much as possible. Thyme will give the dough a pleasant taste and aroma.

Cut the solid butter into cubes and place in the bowl in which you will prepare the dough.

Add flour mixture and egg to butter. Do not add all the flour at once, leave 1/3 of the total amount. When kneading the dough, focus not on the amount of flour, but on the consistency of the dough. You may need more or less flour.

The finished dough will easily form into a ball and will not stick to your hands. Wrap it in cling film and put it in the refrigerator for 30 minutes.

Roll out the finished dough on a sheet of parchment into a rectangle approximately 20*30 cm in size.

Brush the surface of the dough with a little olive oil. Grate the cheese on a coarse grater and distribute it over the entire surface of the dough, slightly short of the edges on all sides.

Wash the tomatoes and remove the stem. I did not remove the skin, this is not necessary, but if you wish, you can remove the skin from the tomatoes by first making cross-shaped cuts and pouring boiling water over them. Please note that in this case, the tomatoes may not retain their shape in the finished pie and will spread. Cut the tomatoes into slices and arrange over the cheese. Peel the onion and cut into thin rings. Scatter the onions over the tomatoes.

Fold the edges of the dough over the filling and pinch a little to prevent it from unrolling. Brush the tomatoes with olive oil using a brush. Sprinkle the top of the pie with ground pepper and thyme. Place the pie in the oven, preheated to 180 degrees, for 40 minutes. When baking, use your oven as a guide.
