Quick & Tasty Kefir Pie with Potato-Cottage Cheese Filling

Rosy, big, filling! Simple and very tasty! Kefir pie without yeast is similar in shape to traditional Caucasian pastries. But the dough for it is prepared with the addition of soda, which is much faster. The filling of potatoes and cottage cheese is somewhat unusual, but it turns out very tasty. Try it!

For dough:

Salt 0.5 tsp
Wheat flour 380 g
Vegetable oil 1 tbsp
Soda 1 tsp
Kefir 250 ml

For filling:

Salt to taste
Potato 200 g
Parsley to taste
Dill to taste
Cottage cheese 200 g

For the top:

Eggs 0.5 pc
Sesame 1 tsp

How to make a kefir pie without yeast? Measure out the required ingredients for the dough. Kefir is suitable for any fat content. Take it out early so itʼs not cold. Take unscented vegetable oil.

Pour kefir into a bowl, add soda, stir. Leave the mixture until numerous bubbles appear on the surface. This is the reaction of quenching soda when interacting with lactic acid.

Add salt and vegetable oil to kefir. Stir.

Sift flour into a bowl. Sifting will remove possible unnecessary particles from the flour and enrich it with oxygen. As a result, the cake will rise better during baking. Do not pour out all the flour at once; you may need less than the specified amount. It depends on the fat content of kefir and the properties of flour. If, on the contrary, the dough is not thick enough, add a little flour when kneading.

Knead the dough. It should hold its shape well, but be soft and tender. Wrap the dough in a bag or cling film and leave on the table for 20-30 minutes. During this time, the gluten will swell and the dough will be more pliable and elastic.

Prepare the pie filling. Peel the potatoes in advance and boil in salted water until tender. Check the readiness of the potatoes with a knife. If itʼs soft, itʼs ready. Drain the water and cool the potatoes. You can take cottage cheese of any fat content, depending on your preferences.

Wash the parsley and dill and dry well. Remove any rough, thick branches. Finely chop the greens. You can also take green onions or cilantro.

Mash the boiled potatoes. I did this with a fork. But if you wish, you can make the structure of the filling more uniform. Then mash the hot potatoes into a puree with a masher and cool. And pass the cottage cheese through a blender.

Combine potatoes, cottage cheese and chopped herbs. Add salt if necessary. Mix well.

Roll out the dough on a floured table into a round layer 7-8 mm thick.

Place the filling in the middle of the dough.

Lift the edges of the dough and bring them together over the filling. Pinch well.

Turn the dough over and roll it out gently, without pressing too hard, to form a round pie. Make a small hole in the center to allow steam to escape.

Lightly beat the egg until smooth and use a pastry brush to brush the top of the pie. If desired, you can sprinkle the cake with sesame seeds. I have white and black.

Bake the pie in an oven preheated to 180C for 30-35 minutes until golden brown. The baking time and mode may not coincide with those indicated; be guided by the operating characteristics of your oven. I got a fairly large cake with a diameter of about 30 cm.
