Filling:

Nutmeg 2 g
Eggs 2 pc
Hard cheese 200 g
Suluguni 300 g
Ground pepper mixture 2 g

Lubrication:

Egg yolks 1 pc

Dough:

Salt 1 g
Wheat flour 280 g
Butter 200 g
Water 75 ml
Eggs 1 pc
Vinegar 1 tsp

How to bake a pie with suluguni? Take all the necessary ingredients.

How to make pie filling? Take suluguni cheese and hard cheese, grate each separately on a coarse grater and place in one deep bowl. You can use any hard cheese according to your taste. The use of suluguni in the recipe is recommended, but not mandatory. You can also take just one cheese or, on the contrary, add more than two, the main thing is to choose a quality product without vegetable fats.

Take the eggs and wash them in warm water and soda, as they may contain harmful bacteria. Break the eggs into a bowl, add spices. I used nutmeg and a mixture of peppers, you can use your favorite spices.

Mix everything thoroughly with a spoon or silicone spatula.

If you have ready-made frozen puff pastry, like I do, then defrost it in advance. If you make your own puff pastry, see the instructions for making it under the recipe steps.

Roll out one sheet of dough on a lightly floured surface and cut out a circle slightly larger in diameter than the baking pan. To do this, you can attach a plate larger than the diameter of the baking dish to the dough.

Place the dough in a greased pan and make sides.

Spread the cheese filling evenly over the dough.

Wrap the sides and place them on top of the filling.

Roll out the second layer of dough to the diameter of the mold.

Cover the filling with it.

Roll out the scraps of dough and use shaped cutters to cut out elements for decorating the pie. Decorate the pie with the resulting dough figures. Brush the top of the pie with yolk. Place the cheese pie in an oven preheated to 200°C for 30 minutes. The times are approximate, be guided by the features of your oven.
