How to make a classic charlotte with baking powder? Prepare your food. Remove the eggs from the refrigerator in advance; the dough will rise better if it is mixed with warm ingredients. Take sweet and sour varieties of apples, with these the charlotte will turn out tastier and more aromatic. I cooked using 4 eggs.

Wash the eggs and beat them into a bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Start beating them with a mixer, gradually increasing the speed. Pour sugar into the eggs in portions. When all the sugar has been added, continue beating until a fluffy light mass is obtained. This will take about 5 minutes.

Sift flour and baking powder into a separate bowl. This will saturate it with oxygen, which will make the baked goods more fluffy. Stir.

Pour the flour into the egg mixture in portions, kneading the dough well after each portion with a silicone spatula. Try to be careful not to destroy the fluffiness of the whipped product. The finished dough will be homogeneous and fluid, like low-fat sour cream.

Prepare the apples. Wash them and cut off the skin. Cut into quarters, remove the core and seeds. Cut the resulting pieces into thin slices.

Take a suitable baking dish, I have a glass one with a diameter of 18cm. Grease the bottom and sides well with a piece of soft butter. Then pour breadcrumbs into the pan and shake it. The breadcrumbs will stick to the butter, forming a protective layer that will prevent the dough from sticking.

Pour half of the dough into the mold. Place apple slices on it in a circle.

Place the charlotte in the oven, preheated to 180°C. Bake it for 35-45 minutes. The exact time will depend on the features of your oven and the height of the pan. Check readiness with a wooden skewer — inserted into the center, it will come out dry. Take out the mold with charlotte and cool it.
