Yeast 25 g

How to make water pies fried in a frying pan? Prepare the necessary ingredients for the dough. Take the highest grade flour. Yeast can be used either live pressed or dry in granules. Heat the water to 35-40°C. To check the desired temperature, drop a little water on the inside of your wrist. If the water feels slightly warm, almost not felt on the skin, then everything is fine. If you feel hot or cold, it means the water is either higher than the desired temperature or lower. And accordingly, it needs to either be cooled or further heated.

If you are using live yeast, crumble it into warm water and add sugar. Stir everything. There is no need to infuse such yeast. They are already active.

But the dry ones need to be activated: add sugar and yeast to warm water, stir and leave until a fluffy cap appears. If the cap does not appear, then the yeast is not active and you cannot continue cooking with it. You need to repeat the process with fresh yeast.

Pour the yeast mixture into a deep bowl. Sift all the flour into it through a sieve, add salt and pour in vegetable oil. You may need less or more flour, depending on the consistency of the dough. Read more about the properties of flour in the article at the end of the recipe.

Knead into a homogeneous, slightly sticky dough. You need to knead with your hands for about 7 minutes. If you knead in a kitchen machine, then the same amount.

Cover the dough with a towel and leave warm for 1 hour. After an hour, the dough will rise and you can make pies from it.

How to make filling for fried pies using water and yeast? You can use any filling, sweet or savory. I made pies stuffed with cabbage. Cabbage can be used both young and last year. You can replace the dill with other favorite greens (parsley, cilantro, green onions) or make a mix of different types of greens.

Melt the butter first and cool it. Important! If you melt in the microwave, do not use dishes with gold ornaments, metal dishes or dishes with a metal coating. Otherwise, unplanned fireworks will occur in the microwave.

Shred the cabbage thinly, removing the stalk and some of the hard leaves next to it.

Boil 600 ml of water in a saucepan (the amount of cabbage). Place the cabbage in boiling water, bring the water to a boil again and blanch over medium heat: young cabbage for about 4 minutes, old cabbage for about 6-7 minutes. During this time, the cabbage should become soft.

Drain the cabbage in a colander, cool and press with your hands to remove excess moisture.

Boil the eggs hard, cool and peel, then finely chop with a knife. The filling should be free of large pieces that could damage the dough when forming the pies.

Wash the greens, dry, shake well, and finely chop.

In a bowl, combine all the prepared ingredients for the filling. Season the filling with salt, pepper and mix well.

Divide the risen dough into 12-14 equal pieces. Roll each piece into a ball with your hands.

Using a rolling pin, roll each dough ball out into an even circle on a floured surface. The size of the circles is approximately 10-12 cm. Place 1-2 tbsp on the dough. l. cabbage filling.

Carefully pinch the edges of the dough to form an oblong pie. Make the rest of the pies in the same way.

Heat vegetable oil in a frying pan until it completely covers the bottom of the pan. Place several pies, seam side down, and fry over medium-high heat (mine is on setting 7 out of 9) until golden brown, 3-4 minutes (depend on your stove and frying pan: it may take more or less time).
