Easy Cherry-Apple Strudel with Vanilla and Cinnamon

The most delicious strudel recipe. Fast and very simple! This recipe is incredibly tasty thanks to the choux pastry. The strudel turns out very tender and airy.

Ingredients (12 portions)

For filling:

Apples 800 g
Cherry 1000 g
Sugar 75 g
Vanilla sugar 15 g
Breadcrumbs 4 tbsp

For dough:

Wheat flour 310 g
Butter 100 g
Vegetable oil 8 tsp
Salt 0.5 tsp
Water 80 ml

Melt the butter. Add 1/2 tsp. salt.

Add 2/3 flour, approximately 200g.

Pour in 1/3 cup (about 80ml) of hot water 50-60C.

Mix everything carefully with a whisk so that there are no lumps.

Pour in 5 tsp. vegetable oil.

Add the rest of the flour (about 110g).

Gently knead the dough with your hand. Donʼt knead for too long. If necessary, add a little flour. The dough should be soft, smooth, homogeneous, not clogged.

Form a bun. Grease with vegetable oil and leave at room temperature for 30 minutes.

Peel the apples and cut into small cubes.

Add pitted cherries to the apples. You can use frozen ones (in this case, they must first be thawed by pouring them into a colander and allowing excess liquid to drain).

Add ground cinnamon.

Add sugar, vanilla sugar and breadcrumbs to the filling.

Mix the filling well.

Divide the dough into two equal parts. Roll out thinly. Place half of the filling, spreading it evenly over the entire surface of the dough, leaving a little space around the edges.

Roll the strudel into a roll, tucking the dough in at the edges.

In the same way, form the second strudel from the remaining dough and filling. Place parchment paper on a baking sheet. Place the strudels and brush them with vegetable oil.

Bake the strudel at 200-220C for 15-20 minutes. The exact time depends on the power of your oven.

Remove the strudel from the oven, brush with butter, cover with a towel and leave to cool. Sprinkle the finished strudel with powdered sugar and garnish with mint leaves. Serve with a scoop of ice cream. Bon appetit!
