Recipe instructions

Step 1

Step 1
How to make broccoli quiche? Prepare the necessary ingredients for the dough. Remove the butter from the refrigerator in advance. You will need cold water, so keep it in the refrigerator before cooking.

Step 2

Step 2
Mix flour with baking powder and sift. Thanks to sifting, the flour will be saturated with oxygen, and the dough will be softer and more elastic.

Step 3

Step 3
Add soft butter to the flour.

Step 4

Step 4
Rub the butter into flour until crumbly.

Step 5

Step 5
Beat the egg with cold water and salt using a whisk.

Step 6

Step 6
Pour the egg mixture into the butter crumbs and stir.

Step 7

Step 7
Quickly knead the dough and gather it into a ball. There is no need to knead the dough for a long time so that the butter does not melt too much by hand. The dough should not be completely homogeneous; it may contain inclusions of oil. Wrap the dough in cling film and refrigerate for 30 minutes.

Step 8

Step 8
Prepare the necessary ingredients for the filling. Broccoli can be used either fresh or frozen. You can also use other vegetables to taste. You can also add any seasonings to suit your taste preferences.

Step 9

Step 9
Cook broccoli in boiling salted water for 5 minutes.

Step 10

Step 10
Place the cabbage in a sieve or colander to drain. Turn the oven on 180 degrees.

Step 11

Step 11
Roll out the chilled dough into a round layer about 0.5 cm thick and larger than the diameter of the mold.

Step 12

Step 12
Grease the mold with oil. Using a rolling pin, transfer the dough into the pan. Distribute the dough over the mold, forming sides (I have a mold diameter of 22cm).

Step 13

Step 13
Place broccoli florets evenly onto the dough.

Step 14

Step 14
Grate the cheese on a fine grater.

Step 15

Step 15
Beat the eggs with a whisk with milk and cream and add a little salt. When adding salt, you need to take into account the taste of the cheese so as not to oversalt the filling. The filling can be made only with cream, or it can be combined. For 1 egg you need to take at least 100 ml of liquid, but not more than 150 ml, so that the filling is sufficiently dense.

Step 16

Step 16
Add grated cheese and nutmeg to the egg mixture and stir.

Step 17

Step 17
Pour the mixture over the pie. If the sides are higher than the filling, you can lower them a little by pressing them down with a fork.

Step 18

Step 18
Bake the broccoli quiche in an oven preheated to 180 degrees for about 35 minutes. The exact time depends on the features of your oven. Let the finished quiche cool slightly and remove from the mold. The pie can be served warm or cooled. Bon appetit!
