Ingredients (12 portions)

For dough:

Salt to taste
Wheat flour 300 g

Kefir 250 ml

How to fry pies in a dry frying pan? First of all, prepare the dough. How to make the dough? Pour room temperature kefir into a deep bowl, add salt and soda. If you did not have time to get it in advance, then warm the kefir on the stove or in the microwave. To prepare the dough, kefir can be used at any fat content, I used 2.5%.

Add sifted wheat flour. It is important to sift the flour to saturate it with oxygen. Then the dough will turn out airy and rise well when frying.

Knead elastic and smooth dough. Wrap it in cling film and put it in the refrigerator for a couple of hours (ideally overnight). If there is no kefir, then you can do without it, using potato broth, which will remain when boiling the potatoes for the filling. The result will be lean dough.

Prepare the filling. How to make the filling? Wash, peel and boil the potatoes in salted water until tender. Determine readiness with a sharp knife — it will easily pierce the pieces.

Drain the water, mash the potatoes, add hot milk and butter. Heat vegetable oil in a frying pan and fry chopped onions in it until lightly browned. Place it in a bowl with mashed potatoes, add salt and ground black pepper to taste, stir. The filling for the pies is ready.

Remove the rested dough from the refrigerator, roll the dough into a long sausage on a floured work surface, and divide it into 12 pieces. Depending on the desired size of the pies, the number of pieces of dough can be increased or decreased.

Using a rolling pin, roll each piece of dough into a small cake no more than 0.3 cm thick. Place a tablespoon of warm potato filling in the center of each cake.

Seal the edges of the pies and place them seam side down.

To prevent the pies from burning in a dry frying pan, heat it very hot. Place the pies on a preheated frying pan. Fry them on one side over medium heat for about 3-4 minutes.

Then turn the pies over and let them brown on the other side. Cover the pan with a lid and keep the pies on the fire for about 5-7 minutes so that they are well fried inside, the dough should not remain wet.

Remove the finished pies to a plate and immediately grease with a piece of butter. Serve the pies warm with tea, coffee or milk. Bon appetit!
