How to bake mackerel with vegetables in the oven? Prepare all the necessary products. It is best to take chilled fish; frozen fish contains much less nutrients. Mackerel is a fairly fatty fish, and therefore healthy, so choose a larger and fattier fish. It can be with the head or already gutted — it doesn’t matter. Turn on the oven to 180 degrees in advance.

Wash and peel the vegetables. Try to cut the skin thinner. I use a vegetable peeler for this purpose.

Cut the vegetables in your favorite way, but do not chop them — they should be medium in size so that after baking they remain tasty and juicy. I recommend cutting the potatoes into wedges, the onions into feathers, and the carrots into circles.

Choose a heat-resistant form in which to cook the dish. Place vegetables mixed around the edges, leaving room for the fish in the center.

Drizzle half of the vegetable oil over the vegetables. I note that the oil can be anything: from the simplest sunflower and corn oil to the expensive olive oil.

Now itʼs the fishʼs turn. The first step is to gut it and remove the gills. Of course, a whole fish, including its head, baked in a mold will look very beautiful. But such a dish is inconvenient to eat, so I recommend cutting off the head and cutting the carcass into small pieces.

Place the fish beautifully in the center of the mold.

Add a little salt. Now you can add your favorite seasonings to the dish and give it a certain shade. If you like it spicier, add pepper and chopped garlic. Herbs would be very appropriate here: thyme, rosemary and basil; they go well with fish. Or add a few slices of lemon or lime to the vegetables.

Pour the remaining vegetable oil over the fish. Bake in an oven preheated to 180 degrees for about 45 minutes. If you prefer a more stewed version, then cover the pan with foil and cook with it; 10-15 minutes before the end of cooking, the foil can be removed for browning.
