Oven-Baked Foil Mackerel with Vegetables

This fish is for dinner and for holidays. And potatoes with it! Yummy! Indeed, for such a recipe, additions are only needed in the form of a light salad (if it’s a holiday or the whole family is visiting on Sunday), or some kind of jar with a winter preparation (lecho, for example, or a salted tomato). And so — the fish is delicious, the potatoes are crispy, and the cheese crust is a delight for everyone!

Ingredients (4 portions)

Basic:

Salt to taste
Ground black pepper to taste
Oregano (dry, 0.5 tsp.) g
Potato 5 pc
Hard cheese 100 g
Caraway 0.5 tsp
Parsley 10 g
Carrot (baby carrots) 70 g
Vegetable oil 2 tbsp
Dry spices (spices for fish) 2 tsp
Mayonnaise 150 g
Mackerel (fresh frozen) 1 pc

Recipe instructions

Peel and cut the potatoes.

Heat the oil in a frying pan and fry the potatoes and carrots over high heat until crusty. Instead of frozen baby carrots, you can use one regular and not frozen one.

Grate the cheese on a medium grater.

Place vegetables on foil and smooth out.

Place the fish (gutted and washed) on top.

Salt and season everything. Donʼt forget the underside and belly of the mackerel.

Generously pour mayonnaise over everything.

Crush the vegetables with cheese. Place some cheese inside the fish.

Make sides out of foil, place the fish with vegetables and foil on a baking sheet. Cover the top with another piece of foil and tuck the edge under the bottom foil. Cook the fish in this form in an oven preheated to 200 degrees for 20 minutes.

Then open the foil and cook for another 20 minutes.

Transfer the dish to a platter.
